1 Make sure your fat is soft
2 Only use unsalted butter – no margerine or other fats
3 Use fresh, free range eggs
4 Make sure the eggs are at room temperature
5 Use self raising flour with a pinch of baking powder
6 Sift the flour to get air into it
7 Grease and flour your tins
8 Make sure the oven is at temperature -
9 DO NOT open the door during cooking
10 Cool on a rack BEFORE taking out of the tin
